Inspector comments: EHS inquired about hot holding capacity for the establishment; previous inspection had involved a discussion of hot holding of reheated fries for customer service, as well as the use of TPHC as an option. In lieu of hot holding, PIC has opted to make fresh batches of fries at time of customer order. As such neither TPHC or Hot holding were observed at time of inspection. EHS provided a hard copy TPHC sheet, should the PIC opt to begin utilizing TPHC.
EHS observed sufficient test kits for available sanitizers in the establishment. However, test guide for the provided QAC test strips was considerably faded. It is the recommendation of the EHS that establishment provided a test kit in better condition for better compliance.
