Inspector comments: During inspection it was found that the middle lowboy at the FOH was not able to maintain temperatures of 41F or below. See temperature chart. PIC called for a vendor to come and repair the unit. Facility has another lowboy unit at the FOH where they are able to hold TCS foods. During the inspection, only micro greens were being held in the unit along with non-TCS foods. PIC is placing the non-TCS items in the middle lowboy unit (since items do not need to be kept cold) and will be using the left side lowboy unit for service. Vendor will be out tomorrow to repair the unit. EHS will make onsite visit to determine if the unit has been repaired, if it is not able to be repaired by tomorrow, EHS will evaluate cold holding capacity. Facility serves up to 6 people per dinner service, EHS feels confident in facilities ability to work out of the single lowboy unit.
