Inspector comments: - Facility does not utilize a buffet style breakfast anymore and has switched to a full service breakfast and dinner model. PIC stated that they use TPHC for the items hot holding but items in hot holding unit (old buffet line) were observed above 135F and were not time stamped despite the employees discarding all leftover food at the end of breakfast, which runs from 6am-10am on weekdays and 7am-11am on weekends. No TPHC written procedures were on site at the time of the inspection either so it was determined that the facility does not utilize TPHC currently. EHS provided a blank TPHC document to the PIC at the end of the inspection, allowing the facility to determine if they would like to use TPHC or not in the future as they get used to the new model of not having a buffet. EHS explained the TPHC procedure and what would be required from the facility should they choose to use it going forward.
