Inspector comments: Establishment has a date marking log that was approved by previous inspector. No issues observed with date marking system in place during inspection. If there are issues with this system in the future, the inspector may require a traditional system of labeling the individual pans. Establishment is also using TPHC for all TCS foods in sandwich cooler and the warm sauces on stove top. EHS discussed with PIC that all leftovers that are held cold must be discarded within 6 hours of being placed in the unit. The hot foods must be discarded within 4 hours if held on TPHC.
