Inspector comments: EHS notes ambient temperatures in the fliptops cannot hold at 41F and lower due to being left with lids open during rushes, but the unit does not appear to be in poor repair. PIC is advised to either 1. Keep lids to Fliptop closed more frequently, so they may work as intended to insulate the unit, 2. Have the units ambient temperature reduced to accommodate fliptop lid removal while still holding at 41F or lower, 3. use lowboys to hold TCS items, or 4. Utilize TPHC will proper procedures and time labels to hold items on time. EHS advises the PIC not hold dressings (ie. Mayo) in plastic bottles at fliptops, and not to fill containers above the fill line. A verification visit will me made to ensure proper cold holding within 3 days.
