EHS found some items dated with discard date and some items dated with prep date. To maintain consistency and ensure dates are being discarded by the expiration date, pick either discard date, prep date or both. Do not write prep date on some items and discard on others as this can make the date marking system confusing to employees. During visit employees could not tell EHS which dates were which. More training needed on date marking. CDI- Potato salad and spinach dip dated for correct date. All other items discarded. Items held for more than 24 hours should be dated.
