Inspector comments: Through discussion with PIC, facility has discontinued the use of TPHC. They are now hot holding or cold holding all items and stated depending on the amount and time it was placed for service, items may be saved for the next day. EHS advised that facility may only cool up to 2 items. Today they stated they heat and cool sausage gravy, egg rounds, and sausage patties. PIC advised going forward only eggs and sausage would be cooled down. Gravy will be voluntarily discarded at the end of the day.
