2-103.11(O) Ensure food employees are informed of their responsibility to report required symptoms, illnesses and exposure.-PF - Observed no signed employee health policies on site at the time of the inspection. Facility had the Mecklenburg County employee health policy on site but no employee signatures were observed on the form and PIC was unable to locate corporate signed copies that were done during the hiring process. 3-501.19 (A) (1) Written procedures for Time as a Public Health Control shall be prepared in advance, maintained in the establishment, and made available for the Health Department upon request. Written TPHC procedures must specify methods of compliance with 3-501.19 (B) or (C). -Pf. - Observed the facility properly utilizing TPHC for the milk carafes at the patron coffee bar area but did not have written procedures on site. 3-304.14(B) Hold in-use wiping cloths in properly concentrated sanitizer between uses. - Observed one of the sanitizer buckets at the front counter to be testing at <50ppm quaternary ammonia. CDI - PIC refilled the sanitizer bucket at the time of the inspection.
