Inspections & violations

Inspector comments: - Facility has an approved TPHC procedure for milk carafes but due to them not selling a large amount of drip coffees and it being a waste of milk they have stopped doing it daily and was not observed at the time of the inspection. The time log is posted by the entrance to the coffee bar and was observed filled out from the last day they had set up milk carafes, 8/11. The time stamps on the log were observed to be for 5 hours total (7am-12pm). Facilities current TPHC procedure is filled out for 4 hour TPHC holds. EHS reviewed the TPHC procedure and informed staff that 6 hour TPHC is an option if they would like to go that route as long as the milk in the carafes remains at 70F or less for the duration of the 6 hours. If they would like to go this route they must update the TPHC procedure to reflect that. Alternatively they can continue to follow the 4 hours TPHC procedure that they already have filled out, which has no temperature requirement for the duration of the TPHC hold, but staff must ensure they are only holding the carafes for 4 hours and not 5 like the logs state they have been previously.
