Inspector comments: Facility has salmon that is pellet fed. Facility shucks raw oysters for stuffed oyster dish.
TPHC is not currently used. If ice baths next to stove do not maintain temperature throughout service, EHS recommends considering the use of TPHC with less volume in pans. This cold holding process for peak service time was not evaluated as facility was just picking up in volume at end of EHS’s inspection today.
