3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed several items in the fliptop #2 unit holding above 41F (sliced tomatoes-44, chicken tenders-47, diced tomatoes-45, pimento cheese- 44). CDI- Food items were still within cooling parameters and PIC moved them to the WIC to rapidly cool.
