4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf. Observed raw chicken on lid of pre sink stated to be already cleaned from use. CDI- Lid and sink re-washed, rinsed, sanitized. 4-602.12 (B) The cavities and door seals of microwave ovens shall be cleaned at least every 24 hours by using the manufacturer's recommended cleaning procedure Observed substantial food debris and splatter inside cook line microwave. PIC states they will clean and replace the top plastic component inside the concepts by today. Replacement part is already onsite. (-1.5)

4-501.14 Warewashing machines and the compartments/drainboards of sinks used for washing and rinsing equipment, utensils, raw food, etc. shall be cleaned before use, throughout the day to prevent recontamination of equipment and utensils, and at least every 24 hours if used. Observed white buildup inside chemical dish machine. PIC states they will conduct the cleaning and de-liming procedure today. No contamination to dishes observed; equipment on racks clean to sight and touch. (-0)

4-601.11(C ) Keep non food contact surfaces of equipment clean to avoid build up of dust, food residue or debris.4-602.13 Non food contact surfaces of equipment shall be cleaned frequently to preclude accumulation of soil residues. Observed dark residue on outside of cold drawers that are across from cooking equipment on the make line. PIC delegated task to an employee during inspection. (-0)
