Corrected during inspection
3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed cut lettuce, chicken, eggs and burger patties being stored in WIC above 41F. PIC stated WIC door was open while deep cleaning was being done. PIC stated he was unsure of how long it was open but stated it wasn’t long; around ten minutes. This occurred at 8:56. EHS took an ambient temperature of WIC and observed a temperature of 42-43F. Thirty minutes later WIC was down to 41F. PIC checked and documented internal temperatures of the WIC at 38F during open. PIC called repair technician to come check WIC just to ensure WIC is holding at correct temperature and able to maintain. The food was potentially out of temperature for a total time of 2 hours and 40 min based on information provided. CDI - All TCS foods observed above 41 cooled within 30min and within time frames based on when the door was left open. EHS advised that the time stamp needs to account for the total time that the cheese is left out of temperature control. CDI - PIC made correction to time labels to ensure cheese is labeled for entire time cheese is left out of temperature control and not more than 8 hours. (0)
