Inspector comments: EHS observed build up of ice inside WIF that PIC explains will cause a habitual need for employees to use a ladder and knock excess ice off fans near ceiling. Though there is no contamination to the food by entry of ice, EHS advises the permit holder to bring the freezer into good repair as soon as possible. WIF is not suitable for food handlers to utilize ladders safely, and knocking off the ice may eventually result in contamination to the food. EHS observed proper use of 6 hour TPHC for milk and creamer at coffee station for customer self service. However, with warmer weather approaching, EHS advises PIC to consider a temporary 4 hour TPHC window. 6 hour TPHC for use on items not to exceed 70F may become less feasible as dining room temperatures increase during Summer. EHS advises staff to monitor the ambient temperature for confirmation the milk and creamer do not come above 70F, and prepare to transition into 4 hour TPHC should it become necessary. PIC is encouraged to reach out with any questions or concerns they may have.
