Inspector comments: EHS observed a continuation of the previous conditions which led to cold holding violations in the Flip-top, with the same root cause. Despite CDI by PIC who voluntarily discarded all items above 41F, EHS will make a return visit to verify proper cold holding. Facility shall be advised that if cold holding is not fully in compliance at the next visit, a risk control plan will be initiated, followed by permit action if the conditions remain unimproved. EHS advises the facility to cease overstacking containers, monitor the food in cold holding to verify 41F or lower throughout service, and consider the cessation of wax paper barriers between layers of sliced product, which significantly thwart the capability of foods on top layers to maintain 41F, and traps cold air in the bottom of the container. EHS provided business card and encourages the PIC to reach out with any questions, comments, or concerns.
