Inspector comments: PIC stated all locations use internal “labeling” system for oil, vinegar, salt, pepper, and oregano bottles on service lines. System is as follows:
Oil is stored in glass bottle with a twist top lid perforated four times. Vinegar is stored in a glass bottle with a twist top lid perforated three times. Oregano is stored in a shaker bottle with a clear body. Salt is stored in a shaker bottle with a metal body and an “S” stamped into the perforated lid. Pepper is stored in a shaker bottle with a metal body and a lid with large amount of perforations.
PIC and staff are all trained on labeling system. PIC unable to provide SOP for this method. Labeling method deemed compliant due to staff’s evident knowledge of system. REHS advised creating written SOP for this method for staff and REHS to review.
