Inspector comments: Meat department employee noted that while utensils were washed, rinsed, and sanitized at an established frequency of less than four hours, previously, the establishment has kept cutting board surfaces in use without sanitization for the entirety of store operating hours, with sanitization occurring only at the end of food preparation and service hours, once daily. At the time of inspection, EHS observed recently cleaned equipment and cutting surfaces and establishment had been in service for fewer than four hours, indicating that proper sanitization had been implemented. EHS and PIC had a conversation pertaining to potentially reducing the frequency of in use utensil and equipment cleaning via use of temperature controlled rooms, as laid out in NC 2017 Food Code 4-602.11(D)(2)(a). Should the establishment opt to utilize reduced cleaning frequency, the utensils and equipment will be maintained and sanitized within these parameters.
