Inspector comments: EHS asked PIC about cooling process of wings. Wings are received pre-cooked. PIC stated that wings are ran through pizza oven twice and then placed to cool at ambient air until they reach 41F. EHS educated PIC that wings would not reach 41F in ambient air. PIC then stated that wings are left out at ambient air for maybe a couple hours and then placed in WIC. PIC stated wings are left uncovered to cool in WIC and then placed in container with lid once they reach 41F. EHS educated PIC that this is likely not the best practice, to leave wings out at ambient air for more than 2 hours but the only way to truly know is to monitor cooling and maintain a cooling log.
EHS asked about PIC about cold holding at prep unit. PIC stated that unit was not left open for extended amount of time and that facility practices keeping unit closed while not in use. EHS observed some items were above 41F on top but at the bottom, they were at 41F or below. However, some items were out of temperature throughout and not properly maintaining. Some items in cold drawers of unit were also above 41F.
PIC stated that items in prep unit improperly date marked had been recently filled up in but label had likely not been changed. Ensure a new container is being placed once they are empty and labels are being removed prior to or during manual warewashing.
