Inspector comments: Observed recently opened packages in walk in freezer (chicken tenders, mozzarella sticks). Based on packaging, these items are ready to eat and were set to be used within the day of opening (items were observed being fried for service at time of inspection). However, some of the packaged items in walk in freezer (chicken fritter patties) were labeled as being made of raw chicken and were labeled with safe handling instructions. Should these items be opened and/or removed from their original packaging within the walk in freezer, proper storage order will apply. (Raw animal foods shall be stored below ready to eat food items) EHS provided PIC with WIC storage order guide. EHS observed items at the olive bar (previous packaged olives) in containers bearing sticker labels with date marks denoting 07/28. Items in question (black olives, green olives) were date mark exempt. PIC has described a system in which olive bar items are removed at end of shift, date marked, and stored within WIC until next day of service. Ensure non-date mark exempt foods are properly date marked and stored, should they be held for greater than 24 hours.

Cold air must flow around product to remove the heat. -Pf Observed approximately twelve (12) recently made sandwiches placed at sandwich grab n go cooler without having first been cooled properly. TCS food items that had been held in the grab n go cooler prior were observed as effectively cold holding. CDI - PIC rotated sandwiches to WIC for proper cooling.
