Inspector comments: EHS and PIC discussed having staff temp and document start time for items on TPHC made in the main kitchen while staff is still in the main kitchen with the food items. This will ensure products do not rise or fall into the temperature danger zone during transport since the maximum serving time is 3 hours. All “the nook” items and breakfast sandwiches are brought from main kitchen and held on TPHC.

3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed whole milk and oat milk above 41F in reach in cooler. Items in cooler at 41F and below. Per employee milks are not returned after every drink if there are several drinks prepared back to back with the same milk. CDI: Oat milk voluntarily discarded and whole milk rapidly cooled to 41F. EHS and PIC discussed placing milks on TPHC during peak times with the understanding that once milk is removed from cold holding and placed on TPHC it may not be returned to the refrigerator. Milk cooler and area where drinks are made are not conveniently located to each other. EHS suggested considering reorganizing area if possible if this continues to be an issue.
