Inspector comments: Facility uses computer based trainings as well as hands on training with employees at hire. EHS advised that more frequent discussion/training with employees on employee health is always beneficial and recommended, especially during typical “sick season”. EHS discussed TPHC use with the PIC as an alternative during rush periods for the most frequently used milk products. EHS also emailed PIC a copy of the updated Employee Health Policy.
#22 · Proper cold holding temperatures −1.5
Corrected during inspection
3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed half and half above 41F in reach in cooler. CDI: EHS observed half and half get opened at beginning of inspection and it was used within 25 min. Half and half is one of the number one milks in drinks at this facility so it is on the counter more than it is in the refrigerator. All other milks and alternative milks were at or below 41F in all coolers. EHS suggested that the facility use TPHC during rush times or use a pre-chilled caraf that will maintain the product at 41F and below and hold it on the counter. EHS advised PIC that once a product is placed on TPHC, it must either be used or discarded within the 4 hours. It cannot return to cold holding. EHS emailed PIC a copy of the TPHC procedures should they choose to move forward with this practice. PIC today switched to using a pre-chilled caraf to maintain temperatures. 5-501.110 Keep waste stored in receptacles so waste is inaccessible to insects and rodents. 5-501.113(B) Keep dumpster, outside waste containers covered with tight-fitting lids or doors. 5-501.115 Discard items and litter stored in the waste areas and enclosures as they are not necessary to operation and maintenance. Observed dumpster doors open and the right side dumpster is missing a drain plug. The dumpster enclosure has some bulky items such as a pallet and a mattress (not from the facility). EHS advised PIC to contact property management to ensure the dumpster area remains clean to prevent pest harborage. *NOTE: This is a shared dumpster space for the entire strip center and is located across the parking lot to the right of the building with the Food Lion*
