Inspector comments: Facility is utilizing TPHC on prep unit. Large prep unit is set for 4 hours and the small prep unit is set for 6 hours. Facility has been using TPHC on non-TCS foods and discarding them after the designated time limits. EHS explained to the PIC that non-TCS food does not require TPHC. EHS discussed corrective actions, including , switching to metal pans and placing TCS foods toward the back of the cold drawers, and contacting a repair tech to assess both prep units. EHS will return in November to evaluate the effectiveness of these changes. EHS recommended temp monitoring to determine if holding temps improve. PIC and EHS will discuss the possibility of using TPHC only during warmer months and only for TCS foods. The facility will also make sure temps are 41 or before before placing in Prep units.
