Observed establishment without written procedures for v&d or bodily fluid cleanup. PIC stated that if incident occurs then the establishment notifies the Publix it operates out of. Observed shredded crab meat dated 4/7-4/9 though PIC stated that shredded crab was originally prepped 4/6. CDI- PIC adjusted date mark to indicate original day of prep and when items were removed from original packaging.
