Inspector comments: EHS provided copy of V&D cleanup procedures. Facility has 2 permits, one for cafe and one for full service kitchen downstairs. Facility had general TPHC procedures to use for both areas, and neither procedures specified which items were held on TPHC. At time of visit, facility was not using TPHC as it was a slower day. Cafe holds half and half on TPHC. PIC updated TPHC procedures and added milk and printed off a copy to maintain upstairs in cafe area.
