Inspector comments: When EHS arrived, PIC was reheating items on steam table. PIC stated that items had been heating for about an hour and were observed at temperatures between 63-108F. EHS educated PIC about proper reheating procedures and items were placed on flat top to reheat.
Inspection completed at 5542 N Tryon St. in Primo’s Tires Lot. Typical operating hours are 11a-5p.
EHS provided V&D and EHP handouts in Spanish.
MFU is currently permitted as a category II. However, MFU was observed to have raw shrimp, raw chicken, raw beef, and raw pork. Current commissary doesn’t have capacity for cooking as there is no cooking equipment. PIC stated that all items are prepared in commissary but cooked on MFU. PIC stated that depending on the quantity of items leftover at the end of the day will determine if all items will be cooled or not, i.e., when there is not a lot leftover, it is discarded, but if there is, it is cooled down and reheated. MFU to be changed to risk category IV. MFU owner also has another permitted MFU that has a separate commissary that does have more capacity.
