3-501.16(A)(1) Maintain TCS foods in hot holding at 135F or above. -P observed hot dogs had been removed from hot holding and placed in a plastic bag inside the cooler with ice. Hotdog temp at 115°. CDI discard as PIC decided that’s just too hot to work and she is leaving for the day.
