#21 · Proper hot holding temperatures −1.5
Corrected during inspection
3-501.16(A)(1) Maintain TCS foods in hot holding at 135F or above. -P Observed potato wedges and individual pizzas holding below 135F on the line, and a few pans in the hot boxes holding below 135F for less than 2 hours. CDI Items were quickly reheated, boxes were turned up, and items placed back in respective places. EHS and PIC discussed best practices on the line. Boxes have to hold items 135F and with turning up the thermostat, that issue has been resolved. For when items are brought to line, EHS suggested that such items such as:individual pizzas, potato wedges, chicken nuggets- items that do not have connecting ingredients such as water, sauce, juice to help conduct and maintain heat-that those items once removed from the hot box be placed on time. The lunch window does not exceed 4 hours so the food served is deemed safe via time in this instance. Will return for EV and check on hot holding items.
